Per the article linked below, Store Pickup orders are typically held for 5 days once everything has been processed. If you don't make it to the store by then, your order is automatically cancelled. The way I see it, you have two options.
First, you could just wait until you're within 5 days of being able to pick up the item and just order it then. Second, if the item is currently on sale—or if you just want to get the purchasing out of the way—you could order it now and then contact the pickup store to ask if you can extend the date, but that's not always a guarantee.
